Method

  1. Heat half the oil in a wok or large non-stick frying pan over a high heat. Crumble in the tofu, sprinkle with the turmeric and fry for 4 to 5 minutes, stirring now and then, until dry and golden in places. Tip onto a plate.
  2. Add the remaining oil and stir-fry the carrot for 2 minutes.
  3. Add the white parts of the spring onions, the garlic and the ginger and stir for 30 seconds.
  4. Add the rice, breaking up any clumps. Stir-fry for 3 to 4 minutes, until the rice is piping hot and some grains are starting to crisp.
  5. Add the edamame and peas and cook for 2 minutes. Return the tofu to the pan.
  6. Add the soy sauce, sesame oil and white pepper and toss well. Stir in the green parts of the spring onions and serve.

Notes

  • 450 g of cooked rice is what you get from about 180 g of uncooked rice.
  • Cold rice fries better than freshly cooked rice, which goes sticky. Cool cooked rice quickly, keep it in the fridge and use it within a day.
