Method
- Heat the oil in a large, heavy pot over a medium heat. Cook the onions and peppers for 8 minutes until soft.
- Add the garlic, tomato purée, cumin, paprika, oregano and chilli powder. Stir for 1 to 2 minutes, until the purée darkens.
- Add the tomatoes, TVP, both kinds of beans, the stock and the cocoa. The TVP goes in dry and soaks up the liquid as it cooks.
- Bring to the boil, then lower the heat and simmer, partly covered, for 30 to 35 minutes, stirring now and then, until thick.
- Stir in the salt and lime juice. Taste and add more chilli powder if you want it hotter.
- Serve with rice, tortilla chips or baked potatoes.

- Keeps for 4 days in the fridge and freezes for up to 3 months.
