Method

  1. Heat the oil in a large pan over a medium heat. Cook the onion, carrot and celery for 8 minutes until soft.
  2. Turn up the heat, add the mushrooms and cook for 6 to 8 minutes, until their liquid has evaporated and they are starting to brown.
  3. Stir in the garlic and tomato purée and cook for 1 minute.
  4. Add the lentils, TVP, stock, soy sauce, oregano and bay leaf. Bring to the boil, then lower the heat and simmer, partly covered, for 15 minutes.
  5. Add the tomatoes and simmer, partly covered, for 20 to 25 minutes more, until the lentils are tender and the sauce is thick. Add a splash of water if it dries out before the lentils are done.
  6. Meanwhile, cook the spaghetti in salted boiling water according to the packet, then drain.
  7. Remove the bay leaf, season the sauce with salt and pepper and serve over the spaghetti.

Notes

  • The tomatoes go in after the lentils have had a head start, because acid slows down how fast lentils soften.
  • The sauce freezes well for up to 3 months. Cook the pasta fresh.
