Turmeric tofu
Method
- Heat the oil in a large saucepan over a medium heat. Add the cumin seeds and let them sizzle for 30 seconds.
- Add the onion and cook for 5 minutes until soft. Stir in the garlic, ginger, turmeric, ground coriander and chilli flakes and cook for 1 minute.
- Add the lentils, tomatoes and water. Bring to the boil, then lower the heat and simmer for 25 to 30 minutes, stirring now and then, until the lentils have broken down and the dal is thick.
- While the dal simmers, heat the oil for the tofu in a non-stick frying pan over a medium-high heat. Toss the tofu with the turmeric and salt and fry for 8 to 10 minutes, turning, until golden and crisp at the edges.
- Stir the salt and lemon juice into the dal, then taste and adjust.
- Ladle into bowls, top with the tofu and scatter with fresh coriander. Serve with rice or flatbread.
Notes
- The dal thickens as it cools. Loosen leftovers with a splash of water when reheating.
- The dal freezes well for up to 3 months. Fry the tofu fresh.
