Method

  1. Heat the oil in a large pan over a medium heat. Cook the onion, carrots and celery for 8 to 10 minutes until soft. Add the mushrooms and cook for 5 minutes more.
  2. Stir in the garlic and tomato purée for 1 minute. Add the lentils, TVP, stock, soy sauce, thyme and bay leaves. Bring to the boil, then cover and simmer for 30 to 35 minutes, until the lentils are tender and most of the liquid has been absorbed. If the filling is still soupy, simmer uncovered for 5 to 10 minutes. It should be moist but not runny.
  3. Meanwhile, boil the potatoes in salted water for 15 to 20 minutes until tender, adding the beans for the last 2 minutes to warm through. Drain well, then mash with the butter, soy milk, nutritional yeast and salt until mostly smooth.
  4. Heat the oven to 200°C (180°C fan).
  5. Remove the bay leaves from the filling, stir in the peas and season with salt and pepper. Spoon into a baking dish of about 3.5 litres, roughly 25 by 35 cm, and set it on a baking tray to catch any drips.
  6. Spread the mash over the top, rough up the surface with a fork and brush with the oil.
  7. Bake for 25 to 30 minutes, until the top is golden and the filling is bubbling at the edges. Leave to stand for 5 minutes before serving.

Notes

  • The assembled, unbaked pie keeps for 2 days in the fridge. Bake for 10 minutes longer from cold.
  • To freeze, cool completely and wrap well. Defrost in the fridge before baking.
