Method

  1. Heat half the oil in a large pot over a medium-high heat. Fry the seitan for 4 to 5 minutes until browned, then lift out onto a plate.
  2. Add the remaining oil and lower the heat to medium. Cook the onion, carrots and celery for 8 to 10 minutes until soft.
  3. Add the garlic, rosemary and chilli flakes and cook for 1 minute.
  4. Add the tomatoes, beans and stock. Bring to the boil, then simmer for 15 minutes.
  5. Mash a ladleful of the beans against the side of the pot to thicken the soup.
  6. Stir in the kale and the seitan and simmer for 8 to 10 minutes until the kale is tender.
  7. Remove the rosemary stalk, stir in the nutritional yeast and lemon juice and season with salt and pepper.

Notes

  • Three standard 400 g tins of beans give about 720 g once drained.
