Method

  1. Lay the cucumbers on a board and hit them firmly with a rolling pin or the flat of a large knife until they split open. Cut or tear into bite-sized chunks.
  2. Toss with the salt in a colander and leave to drain for 10 minutes. Pat dry.
  3. Mix the garlic, vinegar, soy sauce, sesame oil, sugar and chilli oil in a serving bowl.
  4. Add the cucumber and toss. Sprinkle with the sesame seeds and serve straight away.

Notes

  • Chinese black vinegar (Chinkiang) is the traditional choice and gives a deeper flavour than rice vinegar.
