Method

  1. Heat the oven to 190°C (170°C fan).
  2. Toss the apples with the caster sugar, cinnamon and lemon juice in a baking dish of about 2 litres.
  3. Mix the oats, protein powder, flour, demerara sugar and salt in a bowl. Rub in the butter with your fingertips until it looks like coarse breadcrumbs, then stir in the soy milk so that some of the mixture forms small clumps.
  4. Scatter the topping loosely over the apples without pressing it down.
  5. Bake for 35 to 40 minutes, until the top is golden and the fruit is bubbling at the edges. Cover loosely with foil if the top browns too quickly.
  6. Leave to stand for 10 minutes, then serve with the yoghurt.

Notes

  • Protein powder browns faster than flour, so check the crumble after 25 minutes.
  • With sweet eating apples, cut the caster sugar to 25 g.
